How the bread is made

Every loaf is naturally leavened for 36 hours.

From the first hour to the oven, each loaf rises for 36 hours. The bread you buy has had that whole time.

No commercial yeast, ever. Just flour, water, salt and time.

Fresh twice daily

Baked twice a day, so the afternoon bread is still warm.

The bread on the counter in the morning is from the first bake of the day.

Come by in the afternoon and you are getting the second bake, and it is still warm.
